Ceviche Fish Tacos.

So, this is one of the recipes from the 3-Part Cooking Boot Camp that I attended in Victoria, BC, at Cook Culture. I hope you get a chance to try out this recipe this weekend. It’s an awesome summer dish, light & flavorful!
Ceviche Fish Tacos (serves 4)
– 1lb very fresh, firm white fish (or scallops or shrimp)
– ¼ cup lemon juice
– ¼ cup lime juice
– 1 tsp of salt
– 1 bell pepper, minced
– 3 green onions, chopped
– Handful of greens, or shoots
– 1 avocado, cubed
– Corn tortillas
– Optional: minced jalapeno, chopped cilantro, chopped mint, chopped green onion to taste.
Cut the fish into ½” cubes. Be sure that the bones, skin, and blood line have been removed. Mix fish well with the lemon juice, lime juice, and salt. Refrigerate mixture for 10-15 minutes, or until the citrus has cured the fish. While the fish is curing, warm tortillas in the oven on low (300°). When fish is cured, toss mixture with peppers, herbs, and shoots/greens. Serve on warm tortilla topped with avocado.
Freddy and I used snapper, and we chose to use romaine lettuce leaves instead of the corn tortillas. We used chopped cilantro, which was delicious, if you like cilantro!

If cured fish isn’t your thing, and you would rather the fish be cooked in a more conventional way, that’s cool too! You can still use a lot of the ideas from this recipe. I wrote a blog post recently on baking cod that could work well too: Roasted Asparagus & Cod.
